Vanilla Cupcakes

These Vanilla Cupcakes are not difficult to prepare. It has a soft texture and light buttery taste.
My kids love it for its delectable taste and I promise to bake it for them again.

Apple Madeleines

150g (5oz unsalted butter,, melted and cooled, plus extra to grease
3 large eggs
150g (5oz) plain flour, sifted
1/2 tsp baking powder
2 apples, cored and finely chopped
icing sugar to dust
1. Preheat the oven to 200C mark 6. Grease the madeleine tins.
2. Using an electric whisk, beat the eggs and caster sugar together until pale and thick.
3. Then add the vanilla extract.
4. Quckly but gently, fold in the flour, baking powder and apples followed by the melted butter.
5. Spoon the mixture into the madeleine tins.
6. Bake for 8-10 minutes until golden, then remove from the tins and cool on a wire rack.

Chocolate Oatmeal Cookies

(makes about 24 large cookies)

90g butter, softened
25g caster sugar
25g brown sugar
1 egg lightly beaten
1 tsp vanilla extract
1/4 tsp salt
100g plain flour
100g oatmeal
20g dark (semi-sweet) chocolate, finely chopped
50g walnuts, chopped
60g mini chocolate chips

1.Preheat oven to 190 C. .
2.Whisk butter and sugar in a mixing bowl until pale and fluffy.
3.Dribble in the egg gradually. Mix well after each addition. Add in salt & vanilla extract.
4.Sift the flour over the batter, fold in with a spatula.
5.Add oatmeal, chopped chocolate, walnuts and mini chocolate chips. Mix well with spatula.
6.Drop tablespoonfuls of the cookie dough onto the prepared baking tray.
7.Flatten each cookie dough slightly with the back of a fork.
8.Bake for 10 mins or till golden.
9.Transfer to a wire rack to cool completely.

Happy Mother's Day !

Haha! I didn't bake this cake. I bought this Mango Mixed Fruits Cake for myself. -:). Poor me!
Actually I happened to pass by Polar Cake shop @ J8 and one of the staff members was promoting all kinds of Mother's Day Cakes. I was mesmerized by this very rich orange Mango Mixed Fruits Cake. They are giving 10% discount just for today.

Chocolate & Vanilla Marble Cake

225g butter, at room temperature
225g caster sugar
4 eggs
2 tsp vanilla extract
225g plain flour
2 tsp baking powder
50ml milk
50g cocoa powder

1. Preheat the oven to 180C.

2. Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugar and beat until the mixture is light and fluffy.

3. Whisk the eggs and vanilla extract together in a small bowl. Gradually add the eggs to the butter mixture, beating all the time. Sift in the flour and baking powder and fold in gently to mix, then add the milk and mix gently to combine.

4. Tip half of the cake mixture into another large bowl and, into this bowl, fold in the sifted cocoa powder.

5. Place the cake mixtures into the prepared tin by alternating spoonfuls of the vanilla batter with the chocolate batter, then with a skewer gently draw swirls through the cake mixture to ‘marblise’ it. Bake in the oven for 45 minutes or until a skewer inserted into the middle comes out clean.

6. Turn the cake out onto a wire rack and allow to cool before serving.
